Ingredients

Dough

½ cup warm water
1 tbsp instant dry yeast
3 tbsp sugar
2 cups+3 tbsp all purpose flour
½ tsp fine salt
1 pc egg yolk
2 cups vegetable oil, for frying
2 tbsp powdered sugar, for dusting

Ube Mousse:

1 tbsp sugar
1 cup store-bought ube jam
½ tsp ube extract

Steps

VIEW WITHOUT STEPS

  • STEP 1

    To make the dough, mix ½ pack NESTLÉ All Purpose Cream, warm water, yeast and sugar
    together. Set aside. (5mins)

  • STEP 2

    Sift flour and salt in a large bowl. Stir in cream mixture and egg until just combined. Knead the dough for 10 – 15 minutes or until smooth. Place dough in the bowl, cover with a kitchen towel and let the dough rise for 1 hour. (20mins)

  • STEP 3

    Whip NESTLÉ All Purpose Cream with sugar and ube extract until stiff peaks are achieved. Fold in whipped cream to ube jam until light and smooth. Transfer to a piping bag and refrigerate. (10mins)

  • STEP 4

    Divide dough into 9 equal pieces and round into balls. Flatten and place on a tray. Cover with a kitchen towel and let it rise for 30 minutes. Fry dough in preheated oil until golden brown. Transfer to a cooling rack to drain excess oil. (30mins)

  • STEP 5

    Hollow out the middle of the doughnuts. Dust with powdered sugar. Pipe ube mousse and serve. (10mins)
